Colour
The appearance is surprisingly youthful for an 8 year old wine. It’s medium red with cherry red highlights and only a hint of development.
Aroma
The bouquet continues the youthful theme with savoury black cherries, olives and coriander.
Palate
The palate is more integrated with rich, dark chocolate, earthy spice and roast coffee beans. There are some herbal notes in the background and the tannins are tight and gripping. It has great length and depth.
Food Matching
This wine has good depth of flavour and solid tannin grip, ideal for char grilled lamb, haloumi cheese, souvlaki or spicy sausages on the BBQ.
Cellaring Potential
This wine is only just starting to develop and will continue to evolve for many years. The tannin intensity will provide a solid backbone as the fruit softens, becoming earthier.

Unearthing these delights and discovering their complex characters is something I want to share with all wine lovers.
The unearthed collection gives these rare wines a new life however the original winemaker and label remain a secret along with the medals and accolades it has achieved. Whilst this wine’s true identity can’t be shared, the experience is open to all. This range of limited release, aged classics is from a single estate vineyard in the lower Hunter with majestic views of the Brokenback ranges. The wines have been stored in a temperature and humidity controlled cellar since bottling and each wine is a genuine example of premium low volume, hand crafted winemaking.
I’ve released a vertical selection of 5 vintages of Semillon, 5 vintages of Chardonnay and 4 vintages of Shiraz. It’s a fascinating way to see how these premium Hunter wines develop over time and the difference the conditions of each vintage influence the final outcome. This entire collection is from the same Estate and it may be the only time such a comprehensive range will be available at one time.
