Colour
The appearance is classic pale straw with a luminous green sheen. It has brilliant clarity and glistens in the glass.
Aroma
The aroma has distinct citrus and green apple fruit with straw and beeswax complexity starting to develop.
Palate
The palate shows lanolin and buttered toast with honey and vanilla in the back ground. There’s still plenty of lemongrass and grapefruit on the mid palate with cleansing, fresh acidity lifting the palate structure and giving solid texture and balance.
Food Matching
Enjoy this with whole baked snapper with lemon and parsley stuffing or smoked salmon and crème fraiche.
Cellaring Potential
This wine is more advanced than the 2004 Semillon, however it still has many years cellaring for those who enjoy the luxurious flavours only age can achieve.
As a negociant winemaker I travel throughout this country’s wonderful wine regions meeting some of the great characters behind their brands. Every now and then I stumble across extraordinary hidden gems; wine treasures that have gone unnoticed for years or have been concealed to protect their reputation. Unearthing these delights and discovering their complex characters is something I want to share with all wine lovers.
The unearthed collection gives these rare wines a new life however the original winemaker and label remain a secret along with the medals and accolades it has achieved. Whilst this wine’s true identity can’t be shared, the experience is open to all. This range of limited release, aged classics is from a single estate vineyard in the lower Hunter with majestic views of the Brokenback ranges. The wines have been stored in a temperature and humidity controlled cellar since bottling and each wine is a genuine example of premium low volume, hand crafted winemaking.
I’ve released a vertical selection of 5 vintages of Semillon, 5 vintages of Chardonnay and 4 vintages of Shiraz. It’s a fascinating way to see how these premium Hunter wines develop over time and the difference the conditions of each vintage influence the final outcome. This entire collection is from the same Estate and it may be the only time such a comprehensive range will be available at one time.
