Colour
The appearance is deep and rich with vibrant yellows and gold reflecting the maturity of this noble wine.
Aroma
The bouquet is mellow with subtle hints of toast and honey with a background of vanilla custard and stewed fruit.
Palate
The palate is extremely rich and full with lots of developed flavours. Gone is the fresh fruit sweetness which has been replaced with a savoury clove and cinnamon laced fruit cake with brandy soaked raisins and dried apricots. It has a dry nutty finish.
Food Matching
This is a grand old wine and deserves a bit of respect. Avoid strong, spicy flavours. It’s perfect with some mild cheese, crusty bread and fresh sliced ham.
Cellaring Potential
This wine offers excellent drinking now and whilst it has a premium cork closure for longevity my recommendation is to drink it over the next 12 – 18 months.
As a negociant winemaker I travel throughout this country’s wonderful wine regions meeting some of the great characters behind their brands. Every now and then I stumble across extraordinary hidden gems; wine treasures that have gone unnoticed for years or have been concealed to protect their reputation. Unearthing these delights and discovering their complex characters is something I want to share with all wine lovers.
The unearthed collection gives these rare wines a new life however the original winemaker and label remain a secret along with the medals and accolades it has achieved. Whilst this wine’s true identity can’t be shared, the experience is open to all. This range of limited release, aged classics is from a single estate vineyard in the lower Hunter with majestic views of the Brokenback ranges. The wines have been stored in a temperature and humidity controlled cellar since bottling and each wine is a genuine example of premium low volume, hand crafted winemaking.
I’ve released a vertical selection of 5 vintages of Semillon, 5 vintages of Chardonnay and 4 vintages of Shiraz. It’s a fascinating way to see how these premium Hunter wines develop over time and the difference the conditions of each vintage influence the final outcome. This entire collection is from the same Estate and it may be the only time such a comprehensive range will be available at one time.
