Grape Varietals
Shiraz 73% Barossa Valley / Riverland, Cabernet Sauvignon 27% McLaren Vale
Colour
Typical for this era the colour is mid spectrum red with brick edges and bright cherry red hints.
Aroma
The bouquet is all about complexity and balance. Oak is used sparingly and primarily for allowing slow gentle oxidation to highlight berry fruit and earthy dusty esters that have a savoury smoky character. We used neutral yeast strains and allowed tiny hints of volatility to lift the secondary aroma.
Palate
Well before Robert Parker and the 100 point system we judged on a 20 point scale, 3 points for appearance, 7 for bouquet and 10 for flavour. The perfect balance had a rich fruit entry, Cabernet provides blackcurrant and eucalyptus, a full bodied mid palate with Shiraz delivering ripe berries, chocolate, mocha and licorice and a long, firm dry finish with cigar box and pencil shaving complexity.
Food Matching
The typical food match of the period was roast lamb or beef with simple gravy and veg or grilled steak, lamb chops and sausages. The ideal red wine had firm structure, full flavour but nicely balanced tannin, acidity and alcohol.
Cellaring Potential
This style of wine has an elegant sophistication with a combination of fruit, earthiness and savoury complexity. It’s ready for drinking on release and will continue to age slowly over 5 – 10 years.
