The traditional blend of Shiraz and Cabernet Sauvignon is uniquely Australian. It dates back to our original colonial vineyards and is typically “full bodied with a firm dry finish”. As part of the Heritage Collection, this wine is a tribute to the classic blends of our pioneering viticulture.
The colour is a lively cherry red with deep plum and cassis hues with a touch of brick red indicating maturity.AromaThe bouquet is dominated by the rich blackberry and mulberry fruit of Shiraz with hints of herbs and cassis followed by ground roasted coffee and licorice. The aroma lingers and grows in the glass as it warms up, one of the distinctive characteristics of the Shiraz Cabernet blend.PalateThis wine was made in traditional “Heritage” style in open concrete vats with the cap punched down 3 times a day during fermentation and the wine pumped over regularly during the first 9 days to extract maximum flavour intensity. The finished wines were held separately and matured in 3 – 4 year old oak barriques during malo-lactic fermentation. The final blend was assembled after 24 months in a style reflective of the original blends – full bodied, rich and dry.Food MatchingBeing a traditional Aussie classic, it’s hard to go past the perennial favourites of steak, lamb chops, thick sausages and beef patties grilled on the BBQ with onion rings a crusty bun and dollop of tomato sauce.Cellaring PotentialThis wine has had plenty of time to integrate and is ready to enjoy now but typical of the original blends, it will continue to improve for a further 4 – 8 years.
