Barossa Profile is a “Bordeaux” style blend of Petite Verdot, Cabernet Sauvignon, Merlot and Cabernet Franc. Something of an experimental wine, this blend captures a “Profile” of the Cabernet family of grape varieties from Barossa Valley soils. Unusually it is Petite Verdot dominant (45%), which imparts a robust, mouth filling dark chocolate character surrounded by the berry and earthy elements of the other members of the family.

Winery Tasting Notes

Colour

The colour is dark, inky red with a crimson burgundy edge. The legs are viscous and there is the inherent brick red hue indicating considerable bottle maturation.

Aroma

The aroma is immediately intense with blackcurrants and raspberry fruit followed by olives, leather and smoky bacon. The oak influence is obvious with a combination of new and used French oak barrels. Both Hogsheads (300 litres) and Barriques (225 litres) have been used to create an interesting Old World feel.

Palate

The palate is equally intense with blackcurrant and cherry fruit up front followed by dark chocolate and powerful oak with its distinctive pencil shaving character. The blend of varieties plus seven years’ maturation delivers the classic “cigar box” mid palate flavour supported by firm, gripping tannins lifted by a little alcohol sweetness toward the back. The finish is long and lingering.

Food Matching

Slow roasted beef with a rich red wine jus or gravy and Yorkshire pudding would make an ideal accompaniment to this wine. In fact, any of your favourite steak cuts or roast meats would be perfect. Decant before serving to bring out the full volume of flavours.
