Don Sheridan is a true individualist and each wine reflects his tenacity and commitment to quality. This Shiraz Cabernet blend combines rich berry fruit intensity with a solid tannin backbone.
Shiraz 72% Cabernet sauvignon 28%ColourBright cherry redAromaThis wine has a bouquet rich with blackberry and blackcurrant fruit combined with a gamey earthiness and dusty oak character.PalateThe entry is full of ripe, dark berries which lead to mocha and dark chocolate with licorice, cloves and cedar wood in the background. The palate is full, long and dry on the finish with firm, well balanced tannin alcohol and oak. This is a classic Australian blend highlighting the strength of each variety giving a long, round palate structure and firm dry finish.Food MatchingThis is a full wine with great personality and charm. It’s a good all rounder for casual dining. Enjoy it with food for sharing like barbeques, big bowls of pasta, wood fired pizza or platters of cold meats and crusty bread. It’s perfect with flame grilled rare lamb chops.Cellaring Potential2008 was a warm year producing lovely ripe fruit characters but very low volumes from the terra rossa soils so we’ve blended some Shiraz from McLaren Vale to give an extra dimension and fill out the palate. The primary fruit characters are still dominant at this point and will slowly develop over the next 5 – 7 years.
