A fruit driven style supported by subtle oak usage. Looking for complexity of aroma and flavour through clonal diversity, lees contact and barrel fermentation.
These wines have élan, intense pear and apple-like chardonnay fruit when youg with restrained zingy acidity.Rob Geddes MW. 93/100. 5 GOLDS STARS and Top 100 2010.
Mid straw in colour.AromaThe nose exhibits fruit aromas of citrus, stone fruits and melon, with oak spice and mealy characters derived from the barrel fermentation and lees contact. The palate is generous in flavour, underpinned by grapefruit like acid. The finish shows understated oak and excellent fruit flavour and length.PalateWhile very drinkable now, the wine can be cellared with confidence for up to five years to gain further complexity.ServingThe wine should only be slightly chilled to achieve maximum appreciation.Winemaking Note25% of the fruit was whole bunch pressed with the balance being destemmed prior to pressing. Cold settled clarified juice was fermented as separate clonal batches. 100% barrel fermented in French Oak barriques from selected Burgundy cooperages. 20% new oak with the balance having one to four seasons use. Following fermentation the wine was sulphured to prevent malolactic fermentation.Wine remained in barrel on yeast lees for ten months before being blended in late December. Sterile filtered and bottled February 23rd 2009.
Salitage is a premium fine wine producer located in the beautiful and spectacular viticultural region of Pemberton, in the south west of Western Australia.
James Halliday described Salitage as: the most important winery in the Pemberton region. Salitage is the showpiece of Pemberton. If it had failed to live up to expectations it is a fair bet the same fate would have befallen the whole Pemberton region.
Thirty years later Pemberton is recognised as one of the premier cool climate wine regions in Australia and Salitage continues to lead exporting to more than 15 countries around the world.
