Noon Eclipse is aged in a blend of small 300 litre French and American oak barrels and large (Foudre sized) old oak casks for 18 months. There is a relatively small percentage of new oak used (about 15%) as we aim to support rather than dominate the aromatics of Noon Eclipse with new wood overtones.
Fermentation takes place in small open vats which are hand plunged throughout the fermentation process to help extract colour and tannins. Pressing the precious wine from the skins is done by hand (Noon family hands) in small basket presses which are gentle and do not extract too much bitterness or astringency.
Blended of Grenache, Shiraz, Cabernet Sauvignon and Graciano, 2008 Eclipse has a medium-deep garnet-purple color and intense aromas of black cherry, black raspberry, menthol, cumin and fennel seed with some white pepper and a whiff of dusty earth. Full bodied and rich, the fruit is very opulent if a little straight-forward with crisp refreshing acid, medium-firm velvety tannins and a long finish. Drinking well now, it should develop a few more layers with 2-3 years in bottle and drink to 2023+.

It is a full bodied wine suited to cellaring produced predominately from estate grown Grenache with smaller components of Shiraz, Graciano and Cabernet.
Aroma
The nose offers hints of Kirsch, molasses and blackcurrant. It is different from previous Eclipse's, probably due to the inclusion of a little Cabernet and Graciano.
Palate
On the palate, the wine has upfront fruit sweetness and soft acidity which makes it attractive to drink now however there is a firmness of structure to the finish which suggests good cellaring potential.
Food Matching
It will suit richly flavoured dishes along the lines of Lamb Shanks, Osso Bucco and so on.
You will find it rather more enjoyable served over an Autumn or Winter’s evening with some delicious richly flavoured fare such as chorizo sausage, anchovies, olives, tapenade etc, think along the lines of hearty Mediterranean food.
