Winery Tasting Notes

Notes Image

Appearance:

Dark plum colours with purple tinged edges.

Nose:

Complex & attractive fruit and subtle sweet oak nose with hints of chocolately maturation tones. Ripe plum & dusty Mulberry fruit tones complement the sweet vanillan oak tones.

Palate:

A richly layered palate structure of ripe fruit, soft oak and fine tannins are a feature of this wine. Ripe savoury dark berries, hints of mulberries and spicy plum fruit are combined with light vanillin & chocolate oak maturation notes. The palate is well rounded and balanced with lingering fine grained tannins

Vintage:

Coonawarra had an ideal growing season leading into the 2004 vintage, an excellent flowering and fruit set with above average yields and very cool and dry conditions during veraison are the features of the 2004 vintage season. Some rain just before harvest was followed by drying conditions that ensured the fruit was picked at near optimal condition. The season produced Cabernet Sauvignon wines with attractive ripe fruit flavours and generous palate structures with soft tannins.

Oak Maturation:

Matured for approximately 22 months in 225 litre oak barrels, of which 36% were new and predominantly French.

Cellaring:

Medium to long term, 8 to 10 years.

Food Matching:

Red meats of all kinds, and hearty vegetables is an ageless accompaniment to this regal variety, Cabernet Sauvignon.

Winery Profile

Brand Profile Image

Katnook Estate is one of the premier wineries in Australia's pre eminent red wine district, Coonawarra. Katnook Estate wines are made from select grapes grown in distinguished sites within the company's 330 hectares of Coonawarra vineyards.

Since 1980,  senior winemaker, Wayne Stehbens has crafted Katnook Estate wines and more recently, the iconic Odyssey Cabernet Sauvignon and Prodigy Shiraz.

The Coonawarra wine region, Australia's "other red centre" is recognised world wide as producing exceptional Cabernet Sauvignon, as well as stylish Shiraz, Merlot, Chardonnay and Sauvignon Blanc.

Currently, over 5500 hectares are under vine in Coonawarra - with Cabernet Sauvignon and Shiraz accounting for 80% of plantings. 25% of wine produced in Coonawarra is exported.

The wines are shaped by the extraordinary terroir of Coonawarra - where the fabled Terra Rossa soils and cool maritime climate create the perfect wine grape growing environment.

Soil

Coonawarra's is famous for its prized Terra Rossa ( "Red Earth") soil. This rich, friable red loam vary from a few centimetres to a metre in depth and lie over a thin layer of calcareous matter, which in turn overlays a deep stratum of limestone. The cigar-shaped strip of Terra Rossa soil is only 12 km long and 2 km wide.

Coonawarra appears completely flat, but in fact the red soil is situated on a slight but all important limestone ridge. The Terra Rossa soils are considered the best in the world for growing Cabernet Sauvignon.

Climate

Coonawarra is a cool wine region, with similar climatic conditions to Bordeaux, France. Both areas experience long but cool hours of sunshine during grape ripening - encouraging intense flavours balanced by good, natural acid.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

★ ★ ★ ★ ★

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

★ ★ ★ ★

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

★ ★ ★

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
