Deen personally selected the blends and chalked the numbers on the vats to identify them. "For the miniscule yields inherent to botrytis, a bargain dessert wine that hasn’t been concocted by freezing or reverse osmosis in the winery is nigh-on unheard of, and this is why Vat 5 is nothing short of remarkable. Baby brother to the iconic Noble One, it’s matured in small portion in oak and spends a surprising number of years maturing prior to release. The result is, not surprisingly, oozing with complexity of honey, marmalade, toffee and toast. Winery Profile

De Bortoli Wines is a third generation family wine company established by Vittorio and Giuseppina De Bortoli in 1928. The couple emigrated to Australia from Northern Italy, from mountain villages at the foothills of the Italian Alps, near the historic town of Asolo.

Their son, the energetic and dynamic Deen De Bortoli, (b 1936 – d 2003) expanded and consolidated the business created by his parents. Deen's children established De Bortoli's reputation for premium wine including icon dessert wine Noble One and the Yarra Valley wines.

Italian family values passed down from Vittorio remain core values, there is a culture of hard work, generosity of spirit and of sharing good food, good wine and good times with family and friends.

"Coming from the Riverina-based De Bortoli family, the acknowledged masters of botrytis dessert wines in Australia, this wine is terrific value. It is gold with amber tints and has scents of mixed peel and bay leaves. Rich, ripe apricot flavour rolls onto the front of the palate and honey comb, mandarin and clove elements chime in on the middle palate. Nutty characters feature at the finish. The botrytis on the label signifies that the wine is made from grapes infected by the parasitic fungus botrytis cinerea, often called noble rot.
