Ayala is a very interesting house and one to watch, gently finessing styles within the accepted major categories to create a compelling point of difference. The pinot-dominant blend drives bold flavour and lower dosage, providing a savoury and more defined style. There are dried out red-cherry fruits, gentle spices and smooth, zesty bite, finishing with savoury, nutty tannin.

Winery Tasting Notes

Notes Image

Grape Varietals

67% Pinot Noir, 26% Chardonnay and 7% Pinot Meunier.

Appearance

Pale gold in color with a fine mousse.

Aroma

The wine is aromatic on the nose.

Palate

On the palate, it is well balanced and shows great finesse and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness and roundness.

Food Matching

Delicious as an aperitif, Brut Majeur is also the perfect wine to serve throughout a meal. It will pair perfectly with seafood, scallops, lobster, crab, fresh or grilled fish, fish terrines, salmon or beef carpaccio. Brut Majeur also goes along extremely well with white meats, hot pot ("potée champenoise") and white puddling ("boudin blanc").

Cheese: Soft and mouldy cheeses such as Boursault, Coulommniers, Chaource, Brie, Brillat-Savarin...

Dessert: Majour parings include crumble with red berries or figs, fruit-based desserts (apple, pear or peach tarts), almond paste, frangipane pastries such as the French "Galette des Rois".

Winery Profile

Ayala was founded in 1860 and such was their success they were invited as a foundation member of the "Syndicat des Grandes Marques" in 1882, an organisation restricted to the leading Houses. With fruit from Grand and Premier Crus Ayala has offered consistent style and quality and was purchased by Bollinger in 2005.

Ayala shares the same quality imperiative as Bollinger with wines of a different style. In its December 2006 edition the prestigious and influential French magazine "La Revue du Vin de France" selected Ayala Brut Majeur as a "Grand Vin" and included it (together with Bollinger Special Cuvee) in their Top 5 champagnes that illustrated the different styles of champagnes - Ayala being selected as being both an aperitif as well as for the table.

Nick Stock - Good Wine Guide 2012

"Ayala always delivers deliberately distinctive style; here we have a Pinot-dominant blend driving bold flavour and lower dosage to keep it all savoury and more defined on the palate. Assertive red-fruit aromas, gentle spice and taosty Chardonay citrus. The palate scoops nice and round, then stretches smoothly; some zesty bite and a gentle savoury twist to close.Rating 93 & 2 Glasses - Nick Stock, Good Wine Guide 2011

"A well-structured wine with a lovely dry finish. " Rob Geddes MW, Drinks Trade (01/Nov/2010)

"Another very dry wine, but powerful and forward with plenty of chunky, toasty notes and a lot of depth on the palate. Rich and quite full-bodied..." Rating 17.5/20 - Tony Harper, Brisbane News(05/May/2010)

Rating 17/20 - Jancis Robinson, Financial Times(06/Feb/2010)

"Approachable and affordable champagne with a soft full palate, appealing texture and a crisp acid finish." Rating 90 - Ray Jordan, West Australian (05/Dec/2009)

"Lush red apple flavours and cool, leesy mineral character combine in this clean, full-bodied Champagne..." Rating 89 - Joshua Greene, Wine & Spirits (USA) (01/Dec/2009)

"No mistaking the Gallic nose here with some yeast, a little aldehyde and nuttiness adding to the overall funk and circumstance of it, with a few prettier elements too. Fresh citrus blossom and a little brine give it a savoury, aperitif sense that suits a platter of oysters. Lots of life, bubbles and mouthwatering pleasure."Tony Love, Herald Sun(08/Dec/2009)
