This wine is light and refreshing with subtle strawberry and cherry aromas delicately balanced with toasty yeast and brioche characters, well balanced acidity and a creamy rich finish.

Winemaking Notes

The base wine is allowed to settle and naturally clarify before racking off gross yeast lees and prepared for secondary fermentation. Secondary fermentation occurs in pressurised tanks designed to capture the delicate effervescent bubbles that deliver a creamy mouth feel or “mousse” prior to bottling. The fermentation is controlled at cool temperatures to maintain the aromas and freshness of the wine, then halted at the appropriate sweetness designed to maximise the acid and sugar balance and accentuate the fresh apple, grapefruit and citrus notes with some toasty brioche and shortcake flavours.
