Colour

A deep dark red core with crimson edges.

Aroma

Ripe dark berry fruits of blackberry and mulberry, with crème de cassis notes are well balanced on the nose with spicy coffee / mocha oak.

Palate

Dark fruits continue on the palate with dark cherries also covering the palate. Lovely intensity and depth of fruit flavour sits equally well with subtle oak influence and dusty Cabernet tannins creating excellent length on the back of the palate.

Wine Background

The Thomas Hyland range honours the pioneering spirit of Thomas Hyland, son-in-law of Dr Christopher Rawson Penfold, whose stewardship of the company from the late 1800s until 1914 saw the development of Australia's most famous name in wine.

Sourcing fruit from premium viticultural districts of South Australia known for producing varietal Cabernet fruit, this Thomas Hyland Cabernet Sauvignon offers a contemporary expression of varietal flavour and structure.

Vintage Condition

The 2008 vintage was warm to hot in South Australia, with a pro-longed heatwave in mid-March. However, grapes picked before the elevated temperatures were delivered to the winery in excellent condition, resulting in good varietal definition and balanced flavours. Maritime regions such as the Fleurieu Peninsula and Limestone Coast in 2008 held up in the warm conditions, with their afternoon sea breezes tempering the heat.

Winery Profile

Australia's winemaking history of less than two hundred years is brief by European measures though, like Europe, punctuated by periods of extreme success and difficult times. From the earliest winemaking days Penfolds has figured prominently and few would argue the importance of Penfolds' influence on Australia's winemaking psyche.

Without the influence of Penfolds the modern Australian wine industry would look very different indeed. Sitting comfortably outside of fad and fashion, Penfolds has taken Australian wine to the world on a grand stage and forged a reputation for quality that is without peer.

Penfolds' reputation for making wines of provenance and cellaring potential might suggest a mantle of tradition and formality is the preferred attire of a company with so much history to defend. But to label Penfolds as simply an established and conventional winemaker, would be to confuse tradition with consideration and to overlook the innovative spirit that has driven Penfolds since its foundation, and continues to find expression in modern times.

If there is anything traditional about Penfolds, it is the practice of constantly reviewing the wines it already does well, and continuously evolving and refining styles as vineyards mature and access to ever older and more varied vineyard sites improves.
