The palate has an opulent mouthfeel of rich tropical fruits and creme brulee, marmalade and a refreshing twist of lime.

Vineyard

The soils and meso-climate of the Mitchelton vineyard are significantly influenced by the presence of the pristine Goulburn River. The river surrounds the vineyard on three sides, shaping the unique environment and climate of Mitchelton. In turn, geological shifts, ancestral river flows and climate have created distinct soil profiles for individual blocks. The Botrytis Riesling is always sourced from 1ha of VSP trained riesling in the lowest part of the vineyard which is left each year for up to five weeks after the main blocks are harvested. This site has more humidity and is conducive to Botrytis activity.

Winemaking Techniques

After crushing, the fruit is left in the press overnight to separate out the juice from the thick concentrated must. When the juice has been cold settled and filtered it is racked and fermented at 10 to 12 degrees Celsius to retain the delicate aromatics, as well as ensuring enough sugar is left to balance flavour and acid.
