La Cote Aux Enfants is produced from a small Grand Cru Vineyard of the same name, lass than 1 Hectare wide, situated in the heart of Ay, with exceptional exposure and sub-soil. The plot is planted exclusively with Pinot Noir.
Legend has it, the name of this little plot found its origin in the impressive steepness of the slope, which meant that only children were able to work on it.
The Vineyards
La Côte aux Enfants is produced from a small Grand Cru vineyard of the same name, less than 1 hectare wide, situated in the heart of Aÿ. With exceptional exposure and sub-soil, the plot is planted exclusively with Pinot Noir. The utmost care and attention is paid to this vineyard and, in 2002, a green harvest reduced the yield to 8,000 kg per hectare. La Côte aux Enfants is produced under the Coteaux Champenois Appellation and is only made in exceptional years. The harvest date is decided carefully at the moment when the grapes reach their optimum maturity.
Winemaking Notes
At harvest, the grapes are manually sorted and de-stemmed. La Côte aux Enfants is made from the free run juice only, which cold ferments for 10 - 12 days before the temperature is gradually increased. It is then aged in 205 litre oak barrels for a minimum of 2 years. The barrels used are 3 - 5 years old so the oak influence is subtle in the finished wine.
Wines from La Côte aux Enfants display amazing concentration and may rightly be considered among the greatest red Coteaux Champenois. They represent the very best of winemaking expertise from the House of Bollinger and interpretation of the terroir.
