Laurent Perrier was producing a Grand Vin Sans Sucre 120 years ago, so the idea of using no sweetening is nothing new. But it requires long ageing on lees to build enough richness and complexity to make the addition of sugar irrelevant when the wine is disgorged. This wine has zesty citrus fruit over a mineral base that drives a crisp, lively palate (ideal for oysters) which isn't especially complex but is long and well balanced. Aroma
The wine is extremely aromatic on the nose.
Palate
On the palate, it is quite dry and shows great finesse and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness.
Food Matching
Ideal as an apertif, it will pair perfectly with seafood, cavier, scallops, lobster, crab, salmon... Sushis and Asian food are also a very good pairing.
Cheese: Soft and mouldy cheeses such as Boursault, Coulommiers, Chaource, Brie, Brillant-Savarin.
Desserts: Majour parings include crumble with red berries or figs, almond paste, frangipane pastries such as the French "galette des rois".

Ayala was founded in 1860 and such was their success they were invited as a foundation member of the "Syndicat des Grandes Marques" in 1882, an organisation restricted to the leading Houses. With fruit from Grand and Premier Crus Ayala has offered consistent style and quality and was purchased by Bollinger in 2005.
Ayala shares the same quality imperiative as Bollinger with wines of a different style. In its December 2006 edition the prestigious and influential French magazine "La Revue du Vin de France" selected Ayala Brut Majeur as a "Grand Vin" and included it (together with Bollinger Special Cuvee) in their Top 5 champagnes that illustrated the different styles of champagnes - Ayala being selected as being both an aperitif as well as for the table.
