Wine Summary Image

The production of “Methode Traditionelle” sparkling wines has been an integral part of the winemaking at Blue Pyrenees for many years. The Sparkling Shiraz expresses its “terroir” or “where it comes from” better than any other Blue Pyrenees sparkling. Select parcels of Shiraz are nominated in the vineyard or winery for sparkling wine production due to displaying prominent varietal and regional characters along with soft tannins and restrained alcohol. The Pyrenees grape growing seasons are generally ideal for Shiraz starting with winter rains, cool springs and summers, followed by warm autumns, perfect for ripening red grapes. Approximately 5 days primary fermentation on skins in open fermenters, is followed by gentle pressing to tank and then racking off the yeast lees to small and large oak vats for 2 years oak maturation. Secondary bottle fermentation then occurs before another 1-2 years bottle maturation which allows integration of the fruit flavours, tannin, carbon dioxide and yeasty complexity. Finally riddling, disgorging and the ultimate fine tuning (dosage) for consumption takes place resulting in a spectacularly unique product.

The wine spends two years in small and large oak vats before being taken to bottle for the secondary fermentation, when it has another 1-2 years on yeast lees. This results in an elegant, spicy, complex wine with a most attractive savoury finish, not the sweetness that dogs many sparkling shirazs. Blue-gold Sydney International Wine Challenge '13. Colour

Bright ruby red with a youthful hue.

Aroma

The Pyrenees cardamom like spices, ripe plummy fruit, a hint of oak and mature chocolate like tannin make for an appealing aroma.

Palate

The flavours generally follow on from the aromas with sweet dark plum fruit up front, a rich chocolate confection mid palate, and a lingering soft tannin and spicy finish.

Cellaring

Released as a mature style it is ready to appreciate now.

Winery Profile

Blue Pyrenees - then called Chateau Remy - was established in Western Victoria in 1963 by Remy Martin. Remy Martin was committed to discovering the superb sparkling wine potential of the worlds cool climate wine regions and in fact subsequently became the force behind Champagne Houses Krug and Charles Heidsieck. Blue Pyrenees Estate was among the modern Australian wine industry’s first ventures into cool climate viticulture. Ample amounts of sunshine ensure our grapes ripen to full maturity with the heat moderated by altitude vineyards and southerly ocean winds. The climate is warm enough to give concentration and power, yet cool enough to give vibrancy and elegance, resulting in remarkable wines from Cabernet Sauvignon, Shiraz, Merlot, Chardonnay and Sauvignon Blanc.

Our Estate is surrounded by the picturesque blue-hued Pyrenees range named for its beauty and similarity to the Pyrenees mountains bordering France and Spain, though some think this explorer’s memory of what constituted a mountain may have been distorted by his long voyage across the flat seas of the Pacific!

French eccentricity was the hallmark of the Estate and the brand’s creation. In 2002 the Estate was purchased by a group of Australian wine-passionate businessmen. Eccentricity, with a New World twist, is guaranteed to continue with a new, innovative management and winemaking team at Blue Pyrenees Estate.
