Winemaking note
Grapes were selected for ripeness based on flavour in the vineyard. Only free run juice was retained and fermented in separate batches to retain fruit brightness and varietal definition.
Cockatoo Ridge has developed a reputation for producing a range of quality, fruit driven wines from South Australia, which are excellent value for money.
The emphasis with the still wines is to highlight the vibrant, complex varietal fruit flavours, which naturally occur in the grapes, without relying on winemaking techniques. The fruit is estate grown on Cockatoo Ridge vineyards.
