3-week fermentation, matured in French barriques for 14 months. Good hue, although not particularly deep; the deep fruit aromas and flavours are backed by typical cabernet tannins.

Colour

Excellent depth of colour displaying a midnight black dark red core with a deep dark red black tinged hue

Aroma

Nosing reveals ripe blackcurrant, black olive and liquorice aromas intertwined with toasty cedary tobacco characters and spice

Palate

Bold flavours of rich blackcurrant and black cherry fill the palate with traces of liquorice also present over subtle cigar box, black olive and spice. A robust tannin structure provides the framework. Long rich aftertaste of ripe blackcurrant, subtle black cherries, liquorice, cigar box and spicy black olives. A full bodied blend with a solid core of rich fruit held in place by a robust structure.

Winemaker Andrew Hardy

Andrew began with Petaluma in 1982, working and studying his wayup through the ranks as cellar hand, trainee winemaker and finally leadwinemaker. Successfully interweaving practical, ‘in the vineyard’ workwith university studies, Andrew completed his Bachelor of Appl. Sci(Wine Science) at University of Adelaide in 1990. Nominated in August1999 as a finalist in AGT Wine Magazine's Winemaker of the Year award, Andrew is highly respected for his effortless winemaking style,restrained hand in the winery and engaging manner.
