Winery Tasting Notes

Colour

The colour is deep inky red /black through the core with dark crimson and violet hues glimmering on the rim.

Aroma

The bouquet is powerfully intense with fleshy dark plum and rhubarb fruit at the fore giving way to earthy herbs, nettles and tomato leaf. There’s smoky bacon and licorice spice. The alcohol is apparent but nicely balanced adding a lift to the subtle aromas of fine oak and vanilla.

Palate

As with many wines of this caliber it opens with a punch. Rich ripe fruit combined with leather and spice complexity. Its multi layered and continually reveals subtle intricacies of confection, stewed fruit, oak and smoked meats. The initial palate is big and powerful, the tannins are firm but nicely integrated on the middle and the finish is long and savoury. Like walking into a gourmet Barossa butcher, It combines multi layered sensual feast that lingers in anticipation of the next sip.

Food Matching

A wine of this quality is an experience. It will be at home with the finest of fine dining or simply pour a generous serve into a tall, wide bowled glass, allow it to breathe and indulge in an organoleptic feast for the senses. Try it with a starter of Foie Gras on water crackers followed by rare roast lamb with seeded mustard, steamed asparagus and creamy mashed potatoes.

Cellaring Potential

This is a big powerful wine with enormous aging potential. It’s had an excellent oak regime and careful cellar maturation before release. It will continue to develop in bottle for a decade or more. A wine with this complexity will be opened to celebrate many wonderful occasions for years to come.

Full disclosure I'm looking at this day two. Day one is was super tight.

A vibrant purple colour, but not as dense as one might expect given the heady aromas coming off the glass. Plums, dark cherries, liquorice, coffee, chocolate with a subtle herbaceousness. The list could go on, it's a very complex nose.

The palate has great texture, velvet mouthfeel with firm tannins and just the right amount of acidity. Plums, leather, chocolate and myriad spices. Great length.

Drink with Beef Wellington (that someone else cooks for you because it is bloomin' hard).

The “Epiphany” label is reserved for premium wine produced in seasons that display particular fruit qualities prior to harvest. At the core of all Epiphany Shiraz is premium vineyard management and minimal intervention winemaking. The resulting wines are limited quantity batches of natural wines with minimal filtration or additives. They are wines that take time to evolve and allow all elements to become integrated. The aging process will continue in bottle and this wine will develop a light crust over time. Please allow this wine to breathe for at least 30 minutes prior to consuming and decanting is recommended.
