We endeavour to grow the highest quality fruit that freely expresses the terroir of each vineyard. The vineyard philosophy is to develop a soil and vineyard biota that produces a balanced vine living sustainably in its environment.

Informed by the principles of agro-ecology and permaculture, we employ a biological farming system that places focus on the improvement of soil biology through the use of compost teas, estate-produced compost, mulch and other natural soil and plant conditioners.

We endeavour to improve and build soil health through the use of cover crops, tillage and aeration. Our biological farming system is driven by the belief that the health of our vineyard soils, and thus vines, underpin wine quality.

Our vineyards are always hand-pruned, shoot thinned, shoot positioned and crop thinned. All our fruit is handpicked.

Made from Pinot Noir and Shiraz, though they don’t mention that on the bottle; a good thing to my way of thinking.

It’s soft and fleshy with freeze dried strawberries, rosehip, nuts and a little spice, perhaps some blackcurrant and herb too. Light to medium bodied, flows along beautifully with its smooth delivery of flavour, freshened with a little blood orange tang, savoury and gently chalky with a dry and vinous finish of fine length. Top shelf.

Aroma

The 2016 Salasso is coloured a pale copper, with a nose that delivers light red berry and citrus aromas intertwined with ginger and fresh cream.

Palate

The palate, full of delicate strawberry and red currant flavours along with some spicier notes, leads into a softly weighted texture underpinned with fine acidity and excellent length.

Winery Profile

The Port Phillip Estate winery, James Halliday's 2012 Winery of the Year, is situated at Red Hill in the heart of the beautiful Mornington Peninsula. Owned by the Gjergja family, winemaking is overseen by winemaker, Sandro Mosele.

Surrounded by mounds of native grasses and indigenous spotted gums, the new Port Phillip Estate winery, designed by Wood Marsh Architecture, emerges from the landscape as a dramatic curved sculpture made of rammed-earth. Inside, a large cellar door and tasting room, and a light-filled restaurant open out on to an expansive outdoor deck. Underneath, state-of-the-art winemaking facilities - a barrel room, bottling line, wine processing plant, cellaring and offices - share space with six luxury accommodation suites, complete with private decks. Views across the vines to the sea are panoramic.
