Crémant
Sparkling wines designated Crémant are produced using the traditional method, and have to fulfill strict production criteria.
Traditional Method or Method Champenois is based on the same double fermentation process as all Champagnes are made. After first alcoholic fermentation where natural sugar is transformed into alcohol, such a wine is bottled with additional sugar and natural yeasts which provoke a second fermentation into the bottle thus transforming them in those loving bubbles. Such a process takes about 13 months to complete in the underground caves of Burgundy where the constant 12 degrees Celsius temperature and 85% humidity guarantee best result.
Grape Varietals
60 % Chardonnay, 40% Pinot Noir.

Aged for 3 years, this delicate and full flavoured non vintage sparking show the fine aromas of Chardonnay and the power of Pinot Noir.
Winemaking Note
Traditional Method. Blending of the different varieties. Prise de Mousse: 2nd fermentation (after addition of the "liqueur de tirage") will last at least 9 months.
"Remuage" and disgorging: to eliminate 2nd fermentation sediments.
"Dosage": a sugar liquor is added, leaving 8g/l of residual sugar (Brut).
Founded in 1840, and nowadays directed by Jean-Phillipe Archambaud, Maison Simmonnet-Febvre is a traditional Chablis winery.
Based in Chablis, and the new winery in Chitry-le-Fort, Maison Sinnonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru “Mont de Milieu” and Chablis Grand Cru “Les Preuses”. It produces and vinifies a large range of different wines from the diverse “terroirs” of the Chablis region.
Maison Sinnonnet-Febvre also produces and vinifies wines from the historic Yonne vineyards. These vineyards were destroyed by the phylloxera crisis that hit the area in the 19th century. It has progressively been replanted and has today regained its prestige. Maison Sinnonnet-Febvre also produces a large range of “Cremants de Bourgogne.”
Traditional winemaking methods and modern technologies are combined to fully express the characters of these very unique vineyards.
