Winery Tasting Notes

The appearance is mid spectrum to deep red with lively cherry hues and delicate ruby hints. The occasional flash of violet is a reminder of ripe Mourvèdre berries.

The nose is full of vibrant fresh plum, currant and cranberry with varietal spice and fragrant lavender overtones. Shiraz adds a hint of eucalypt and Mourvèdre is sweet and rich with earthy spices delivering complexity and sophistication.

The palate is elegant, adding raspberry and rhubarb to the fruit spectrum with hints of pink musk emerging on the mid palate. Mourvèdre adds a savoury kick with dusty earth, forest floor and dried herbs. The acidity is lively on the edge giving support to clean dry tannins which build through the palate leading to a firm clean finish with lingering spice and smoky game.

This is a wine for tender, slow cooked meats like lamb shank, Osso Bucco or beef gently roasted in a spicy marinade of olive oil, star anise, pepper and lashings of garlic. When the meat is falling off the bone it’s ready for the complex flavours of this original blend.

This is an outstanding example of this traditional blend and will reward careful cellaring for up to 15 years.

Winery Profile

My first winemaking experience was harvesting grapes in the Barossa Valley during vintage 1981. Long hot days were spent hand picking bunches of sweet, sticky Riesling, Shiraz, Cabernet, Grenache and a host of other nearly forgotten varieties. At the end of each day after the last bins were tipped into the crusher, we’d meet at the weighbridge with Peter Lehmann for a bottomless glass of robust Shiraz and an inspired conversation about the new wines and vintage developments.

After three decades my day still ends with a nice glass or two of Shiraz or maybe Chardonnay but a lot has changed over that time. From a humble cellar hand plunging skins in open concrete fermenters during the 1980’s, to debating the appropriate cooperage for Hunter Shiraz with Len Evans in the 1990’s to the corporate boardrooms of giant multinationals in the 2000’s, I’m now back to making wine as an independent negociant.

Based in the heart of McLaren Vale, I’m surrounded by wonderful old vineyards and dozens of modern wineries run by talented winemakers. The joy of being a negociant winemaker is the flexibility to be able to source grapes and make wine anywhere throughout Australia. The benefit is an unlimited resource of varieties, regions, styles and skills to craft individual batches of unique wines without constraints.

My goal is to create genuine, honest wines that showcase flavour, vitality and life. Good wine should be accessible to all and be enjoyed as part of a healthy, active lifestyle with fine food, close friends and plenty of fun. I have many favourites but I believe variety is the spice of life and I enjoy discovering new flavours and stretching the boundaries of traditional winemaking.

From an old favourite to something exotic, tantalizing and new, I hope you enjoy the journey through my selection of classic Australian wines.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
