Intense, savoury black fruits with spicy notes on the bouquet; fine tannins are like built-in cupboards on the palate, evenly distributing themselves through its length.

The one everyone always wants to know about though - is of course Penfolds Bin 389 Cabernet Shiraz 2005 ($58). No one in their right mind can call this wine disappointing. Indeed I reckon it's the best since the 1996. It's a wine of immense structured power. Sure there are rich flavours of plums, blackcurrant, smoky vanillin and tobacco, but really it's a wine about tannin and balance and grunt. I don't think I could enjoy drinking this right now (well, I could, but only on masochistic nights) but I know that it will cellar like a dream. A classic in the making.

A genuine 389, whose sumptuous depth of vibrant dark fruit knits seamlessly with sweet chestnut/mocha/vanilla oak and a smooth, drying spine of loose-knit tannin. Deep and heady, it's scented with violets, liqueured cherries and dried herbs and steeped in flavours of dark plums, blackberries and cassis. Ripe but certainly not overcooked, it's supported by a creamy structure of firm, loose-knit tannins, finishing with lingering fruit and a dusty mouthfeel. South Australia, 18.7/95, drink 2017-2025)

Australia's winemaking history of less than two hundred years is brief by European measures though, like Europe, punctuated by periods of extreme success and difficult times. From the earliest winemaking days Penfolds has figured prominently and few would argue the importance of Penfolds' influence on Australia's winemaking psyche.

Without the influence of Penfolds the modern Australian wine industry would look very different indeed. Sitting comfortably outside of fad and fashion, Penfolds has taken Australian wine to the world on a grand stage and forged a reputation for quality that is without peer.

Penfolds' reputation for making wines of provenance and cellaring potential might suggest a mantle of tradition and formality is the preferred attire of a company with so much history to defend. But to label Penfolds as simply an established and conventional winemaker, would be to confuse tradition with consideration and to overlook the innovative spirit that has driven Penfolds since its foundation, and continues to find expression in modern times.

If there is anything traditional about Penfolds, it is the practice of constantly reviewing the wines it already does well, and continuously evolving and refining styles as vineyards mature and access to ever older and more varied vineyard sites improves.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
