Winery Tasting Notes

Colour - Straw yellow with bronze hues.

Palate - Rich and smooth with a nutty, dry finish.

Aroma - Complex developed aromas showing wood maturation and “flor sherry” characters.

Peak Drinking - Best consumed within one year of opening.

Vinification and Maturation - Grapes were picked in February - March. The juice was then separated from the skins and fermented for several days until the desired residual sugar content was reached. A very neutral fortifying spirit was added to arrest fermentation. Majority of the wine was stored in small old oak for an average of twelve months prior to blending. The wine was then stabilized, filtered and bottled.
