Wine Summary Image

The fruit was machine harvested which allows for about 2 hours of moderate skin contact prior to pressing. This gives the wine some extra flavour intensity without extracting too many phenolics. We make a more restrained style of Sauvignon Blanc, so we pick the fruit when it has some lovely citrus, herbal and gooseberry characters, rather than the more tropical fruit characters. Following cool fermentation the wine spent 6 months on yeast less to enhance mouthfeel and texture

I pulled out my old Le Nez du Vin deluxe set the other day, ostensibly for the kids to play with, though I couldn’t help sniffing the vials once more myself for old times’ sake. Must have been a decade at least, since I last sniffed them, and it seems that the potency of the smells, while slightly diminished, are pretty much true to how I remember them. Anyway, having a whiff of this wine recalled vials no. 4 and 18, being blackcurrant buds and green pepper. These introductions I write…

Blackcurrant buds and green pepper, lime and grapefruit. Here’s a light, tight and racy Sauvignon, but there’s a purity and lilting charm that carries it along. There’s a fresh almost mineral water feel, a subtle creaminess, and a pleasant healthy vegetable juice character, with perhaps a little floral perfume in the aftertaste. A strange note for a curiously enjoyable wine.

This cool climate Sauvignon Blanc is a fresh and aromatic wine. It shows powerful passionfruit and gooseberry aromas on the nose, whilst the palate is deliciously refreshing and crisp with the partial oak fermentation adding palate depth and complexity.

Goes well with fresh flathead

The fresh, crisp acidity really helps cleanse the palate and makes it a great match for fresh Tasmanian flathead, whether it be crispy battered flathead, or pan fried flathead in butter and lemon. It will match perfectly with fresh out of the water flathead..

Holm Oak is the labour of love of dynamic duo, Bec Duffy and her husband Tim Duffy. Since 2006 they have followed their dream of crafting delicious expressions of cool-climate Tasmanian wines. Bec is the winemaker and Tim is viticulturist. Their complementary skills provide a vision to produce delicious wines that reflect their home, Tasmania’s pristine Tamar Valley, and their own personalities – honest, down to earth, genuine and authentic.

Rebecca Duffy - Winemaker

Rebecca is a qualified winemaker with 20 years of experience including vintages in McLaren Vale, Coonawarra, Napa Valley and Western Australia. Prior to launching Holm Oak, she most recently worked as senior winemaker at Capel Vale Wines in WA. 

Tim Duffy - Viticulturalist

Tim is a third-generation grape grower and an agronomist with extensive viticultural experience. He was born and bred in Nyah, near Swan Hill in Victoria, and his family have a long and successful viticultural history.
