Winery Tasting Notes

Colour

Pale Straw.

Aroma

Opens with the aromatics of fresh nettles and cut grass; there is also the faint nuance of lemon zest and tropical fruits. Lees stirring has added an extra dimension with flinty, almost funky notes evolving.

Palate

The palate is full and textural, it bursts with flavour. There is spice complementing the fruit, which adds a lovely balance to the wine. The finish is quite savoury and textural, with preserved lemon and dried herbs.

Food Match

Try with lemongrass Thai green curry and zucchini noodles or with locally farmed barramundi or Southern Rock lobster.

Cellar

Mawson’s Cape Denison Sauvignon Blanc is best consumed in its youth.
