Winery Tasting Notes

Bouquet - Aromas of blackberries and plums with a hint of dark chocolate.

Palate -The palate is soft and generous, showing blackcurrant flavours, supported by a soft silky tannin structure.

Grape Conditions - The 2017 Shiraz was sourced from a number of varied sites throughout South Eastern Australia to create a wine of diversity and complexity. It was harvested in parcels during March at a range of baumé levels from 13.5 to14.5.

Nikki Palun studied a degree in Mandarin Chinese andCommerce and travelled throughout China and Europe during her formative yearsmaking her living as a professional musician.

Upon her return to Australia, she worked for De BortoliWines as their Export Manager for Asia Pacific, Middle East and Africa whereshe developed a deep passion for wine and the promotion of wine culture.

Nikki studied Oenology and Viticulture at Charles SturtUniversity and upon leaving De Bortoli in 2013, she established Octtava Winesto follow her desire to make wines with their own unique personality and style. 

Octtava is a musical term written as 8va anddenotes that the notes on the score are to be played an octave above intoa higher realm. It also means the eighth day, a day of feasting, fine wines andpeople coming together.

We produce a wide range of wines from diverse vineyardregions within Australia at all price points. Our premium wines are hand pickedfrom single vineyard sites and made in a natural way with minimum interferenceto preserve the unique character of the vineyard site. We also produce a widevariety of everyday drinking wines for people to enjoy in their daily life.
