Vinification Notes

Harvest was carried out at night. The fruit was pressed (using an airbag press). After settling the juice was warmed and inoculated with a neutral yeast selected for its ability to respect the purity of the fruit.

Post fermentation the wine was stabilized, minimally fined, filtered then bottled.

Vintage Notes

A well above average wet spring led into a dry stable summer. Cooler than average temperatures led to a later start for vintage which help aid the fruit development. White wines from 2017 will be vibrant and intense with good balance

Winery Tasting Notes

The wine has bright lifted aromas of nashi pears and spice. Intense pear like palate, clean citrus acid backbone. Underlying spicy character adds to the wines charm. A clean and lingering finish.
