58% pinot noir, 42% chardonnay, 10 years on lees, 15% reserve wine kept in a 5500l foudre, zero dosage. An unbelievably complex wine, demonstrated by zero dosage when bottled. Length, elegance and a complex matrix of berry fruits, aromas and flavours.

Fresh pears and lemon curd are immediate, followed by nougat, Anzac biscuits, freshly milled wheat, and a hint of orange blossom

Palate

A lovely rich and creamy mousse gives way to a fresh and vibrant palate. Built around a mineral, oyster shell backbone, there is plenty of delicate red fruits, rose petal, lemon and candied burnt citrus. After ten years on lees, the wine has developed a beautiful complexity displaying a refined elegance with great length.

There is true dedication and exchange between the wineries when producing the Yarrabank wines, with winemakers each year traveling from Devaux to Australia to assist in the production process. Yering Station winemakers travel to Champagne annually to experience first-hand the structure of grapes needed to make great sparkling wine.

The exclusive use of Chardonnay and Pinot Noir grapes hand picked with the perfect balance of ripeness and acidity ensures that the Yarrabank style is maintained. Chardonnay fruit gives lightness, elegance and finesse whilst the Pinot Noir enhances palate length and mouthfeel.

Our cool climate vineyards in the Upper Yarra Valley offer differing soils and exposure to optimise the diverse characters of the two grape varieties. This gives our winemakers a fantastic range of base wine component to produce complex and balanced sparkling wine.
