Winery Tasting Notes

Colour - The appearance is deep plum red with dense crimson and garnet hues on the rim and long, viscous legs coating the glass.

Aroma - The bouquet is intense with alcohol spirit, cedar wood and earthy mushrooms immediately obvious. There is ripe blackcurrant richness and a lingering herbaceous, forest floor character. The aromas continue to grow as the wine opens up in the glass revealing lovely oak and leafy herbs.

Palate - The palate is powerful and full with firm dry tannins giving solid structure and great length. This Cabernet is from the Rozaklis vineyard near Aldinga in deep rich clay soils which produces long living wines that can carry big oak and develop slowly over many years. This wine is just starting to show the rich dark chocolate character that is typical of the region.

Food Matching - From a hearty stout pie to a grand Beef Wellington this is a wine for complex flavoured meat dishes and rich sauces. Steak dishes from any cut make a great match and decanting prior to serving is recommended to allow it to open up at room temperature.

Cellaring Potential - This Cabernet has already had over four years maturation and is starting to show the complexity of bottle age. It is delicious drinking now and will continue to deliver for another 4 – 6 years.
